Baby New Potato Salad

All you need is:

1-2 lbs. red or white baby potatoes, cooked in water

your favorite chopped up vegetables – I used, red peppers, celery & onion

Your favorite herbs-mine were parsley and cilantro, Himalayan pink salt and freshly ground black pepper

2 eggs, hard-boiled and chopped

extra virgin olive oil and your favorite apple cider vinegar-mine is my home seasoned garlic scape ACV

I didn’t measure anything, I just added until it looked right…use your creative freedom!

Chill or serve immediately. Enjoy!

This is the first time I’ve grown garlic and thanks to farmer Clem I was successful! I pulled it up today so it needs to dry for 2 weeks then I’ll store it and use it.

Millet, another whole grain

It’s slightly nutty and slightly chewy-in a good way! I made a small batch to refrigerate for future meals but took a little out for today’s lunch. I added olive oil, pink Himalayan salt, walnuts & tomatoes. There is 17 grams of protein per 1/4 cup, I used about 1/2 cup, and the walnuts have 5 grams of protein per 1/4 cup, I used about an 1/8 cup.

My current favorite whole grain, Farro

Farro, aka spelt, is a quick & easy whole grain to prepare. In just 15 minutes or so you can have a filling, healthy base for mixed veggies or a side dish with your favorite meal. Some health benefits include blood sugar regulation, cholesterol lowering benefits, B3, protein, zinc, magnesium & iron, easily digestible for those with gluten intolerance. Pearled farro is NOT a whole grain as the germ has been removed.

Lemon Balm

Lemon balm is a calming herb. You can add it to salads & other greens or steep it for a calming herbal tea.

Oregano

There’s only so much you can do with fresh oregano; I already have so much I think I’ll have to dry & bottle some of it.
